This excellent steel cut oatmeal recipe will give you sustained energy and lots of minerals (3 servings).
- 1 cup of steel cut oats
- 1 tablespoon of coconut oil
- 1 3/4 cup of almond milk *
- 1 teaspoon of ground cinnamon
Choice of garnishes:
- Cherries, strawberries, blackberries, blueberries, raspberries (fresh or dried)
- Chopped walnuts (Grenoble, almonds, etc.)
- Grilled coconut flakes
- Walnut butter
Place the chopped oats in a medium bowl and cover with water. Soak the oats overnight uncovered. In the morning, drain and rinse.
In a saucepan, melt the coconut oil over medium heat. Stir in oats, heat to medium, and toast in oil for a few minutes, stirring frequently.
Add milk and cinnamon. Simmer the oatmeal by mixing frequently until it thickens.
Remove from heat and add your favorite topping.
* Changing almond milk with coconut milk would also be a good option.
